The BEST Roast Potatoes
Twice cooking your potatoes gives them the perfect crunch… our tallow takes it to the next level.
Ingredients
Roasting potatoes
Herbs of choice (we love fresh rosemary, thyme, dried paprika or oregano)
Salt (LOTS)
The Wholesome Bones Co Grass Fed Wagyu Beef Tallow
Method
Preheat oven to 180•c. Prep your potatoes by washing and cutting to desired size- we recommend in half.
In a saucepan add potatoes, water to cover and salt. Salting your water correctly here is crucial to the finished flavour. Salt the water like you were cooking pasta, salty like the sea, and then a little more.
Bring the water to the boil and then monitor the potatoes. They are finished cooking when you can pierce through with a sharp knife and have no resistance.
Drain potatoes in a large colander shaking around a little to rough the edges.
Transfer to oven proof dish and press potatoes randomly with fork, breaking the flesh and skin to create areas that will crisp easily. Drizzle with tallow. Sprinkle with salt and herbs.
Roast the potatoes to desired crispiness. YUM!
