Our broths are a brilliant base for so many dishes…

Ingredients

This is a dish where you take the lead…. what’s left in the fridge? what do you need to use up? what flavours do you love?

For ours we used 1/4 cabbage, half a red pepper, onion, fresh ginger and garlic, some mushrooms and shallots. You could also use carrot, leafy greens etc

Noodles- we used udon and cooked them in the broth as we prepared it.

Method

  1. Prepare your vegetables by slicing.

  2. Sautee onion, garlic and ginger.

  3. Add hot water and broth to your saucepan (amount of water and both depends on amount of serves.)

  4. Add noodles to start cooking.

  5. Add vegetables (we like them with a little crunch so added them with just enough time to blanch.)

  6. Serve in your favourite bowl. Delish!
