Mashed Potato for the Festive Season

This is no ordinary mash. This is festive mash. Rich, creamy (and packed with nutrients but the kids will never know!)

Ingredients

Your preferred potatoes suitable for mashing

Salt to taste

Grass-fed butter

Medium yellow onion

Minced garlic cloves to taste

1/4 cup coconut cream

1 tablespoon The Wholesome Co Just Bones Broth

Dash water

Shallots to garnish

Method

  1. Boil potatoes in salty, salty water.

  2. Thinly slice onion and mince garlic (add amount of garlic to your taste)

  3. Saute onion in butter and a little salt until soft. Add broth and a dash of water and stir over a low heat until liquid reduces.

  4. Put drained potatoes into a dish, add onion mix and mash.

  5. Saute garlic in a little butter in the same pan as the onion. Add to mashed potato and stir through.

  6. Add coconut cream, butter, salt and pepper. Garnish with shallots. Enjoy x
